Sal & Gabi’s Sampling of Cuban Cuisine

The multiverse is large. So large, in fact, that it’s impossible to consider the number of alternate worlds that exist beyond ours. But there’s one thing you can count on as a constant across all of them: everyone loves Cuban food! Here’s a taste of what’s on the menu in Sal & Gabi Break the Universe.

Ropa Vieja

A mouthwatering entrée that Sal Vidón’s mami prepares expertly in every universe. It consists of shredded or pulled beef that’s drowned in a full-bodied tomato sauce with notes of cumin, garlic, and onion. Usually paired with vegetables and white rice, this dish is a crowd-pleasing staple of Latin culture.

Yucca

A root plant not dissimilar to the potato, yucca adds a nice starchy element to any family meal. The trick to perfecting yucca is to cook it with a dash of salt and lime juice until it is tender but not mushy. And no yucca is complete without a dressing of mojo sauce, made with citrus and garlic.

Guava Paste and Cheese

As a type-one diabetic, Sal always needs to keep snacks handy. Growing up, he was obsessed with guava paste and cheese. And we can’t blame him. The savory flavor of white cheese combined with the natural sweetness of guava can’t be topped as an after-school pick-me-up.

Frijoles Negros

You may think it would be difficult to make black beans exciting, but with a kick of pepper, onion, and garlic, this often-overlooked side dish can be transformed into something wondrous. In fact, it’s nearly impossible to imagine a Cuban meal without them. And if you’re worried about flatulence, its association with beans is a myth.  What happened after dinner last night was . . . unrelated.

Pernil

Pernil is a slow-roasted pork leg or shoulder that’s served whole and is meant to be shared during large meals, particularly on holidays. We won’t blame you if you end up going for seconds and thirds. The extended marination of the pork ensures a rich flavor and a tender texture that melts in the mouth.
